Sal’s Mom’s Banana Bread
Ilona Drew from Brighton sends in this recipe which reminds me of eating bananas at home. My mum always insists that the older bananas are eaten before the newer ones, which of course means that if your banana consumption dips even slightly you find yourself fighting an endless battle eating brown bananas to get back to the perfectly ripe ones. This cake is what we needed…

About ripe bananas, I love them, and if I find myself having only “not so ripe” bananas, I cook them in the oven for several minutes : they become really dark and flavorful, as bananas are in pastry shops deserts.
To use a lot of ripe bananas I have this banana pie recipe, it’s always a hit among my friends. I’m going to draw it and I’ll send it to you if I may ?

Love your site. I love banana bread with crystallised ginger and chocolate chips in it, it’s delicious.
