Cheese Eggplant

Krysalia from France says of this recipe, ‘I love this cheese eggplant dish because it is hearty and low carb. The cheese pictured is “le Maroilles”, a famous north-of-france feet-smelling cheese with orange crust. This cheese smells strongly but has a mild taste and is heavenly creamy when baked
. Anyway the recipe is so simple that any cheese will be very good, from the softest fresh goat cheese to the hardest pecorino.’

It is excellent on potatoes, toasts, savory tarts, and any other use when the dish is hearty and hot (baked pasta with cream and cheese, for example).
