A quick &quot;bake&quot; in the microwave oven does the trick before hand, then simply slice and pan fry.
Though for a &quot;proper&quot; chip, or french fry you want to start with a blanched potato that has then been frozen.  Then deep fry.
What you are proposing would result in a slimy textured, hot potato strip.</description>
