This isn’t really a good recipe for french fries.
For a better quality fry, start with a pre-cooked potato.
A quick “bake” in the microwave oven does the trick before hand, then simply slice and pan fry.
Though for a “proper” chip, or french fry you want to start with a blanched potato that has then been frozen. Then deep fry.
What you are proposing would result in a slimy textured, hot potato strip.
